Eggs and Panelle

Panelle with pesto
We've been experimenting with panelle which is a chickpea cake. This particular one was combined with pesto and came out rather delicious. Baked and topped with roasted tomato and cucumber salad. We're almost positive they never do this kind of thing in Italy, however it's an homage to Italian creations such as the panelle and the pesto combined with local flavors. It's very Italian to cook with what you have available.

The green beans lose their bright green color, but become very flavorful. Sometimes aesthetics aren't the most important factor in cooking. The radishes and green beans both came from our own garden! 

Homemade fettuccine with pesto

This pesto is made with almonds, sunflower seeds, and spinach. Not traditional, but what we had on hand and came out to be as good as the original recipe. The homemade fettuccine had the perfect texture and color, courtesy of the fresh farm eggs we get.

Bruschetta, Squash Blossoms, and Ravioli

Bruschetta
 We are now making our own homemade bread which is made with some semolina flour. This makes the bread a little denser, but adds so much body and flavor. On top is white beans, tomatoes, and basil. The key to great bruschetta is making the bread crispy on the outside, soft on the inside and it should be eaten immediately.

Squash Blossoms
We've been experimenting with squash blossoms lately and have finally found the perfect combination of ingredients. They are stuffed with ricotta cheese, corn, tomatillos, garlic, red chili flakes. They are then breaded with fresh homemade breadcrumbs and roasted in the oven.

 We picked a squash not knowing exactly what kind it was. After roasting it, we realized it was spaghetti squash and decided it would be perfect for stuffing in ravioli. Sometimes you create a dish you will never forget. This is one of those dishes.

Farinata

In Italy, farinata is usually a street food. We've taken liberties with the preparation and added our own local twist. It's made from chickpea flour, so is gluten free and still very delicious. The arugula greens on top are grown in house.

Best bread yet

Finally!!! The bread came out just like everyone anticipates it to look and feel like. Crisp on the outside and soft on the inside. It's so awesome to make a loaf of bread that isn't loaded with preservatives and things you've never heard of. Back to the basics.
